When you first see her comes across as rather... bubbly to say the least. She's very energetic in the way she greets Ciel and the way she talks, getting very excited over things such as clothes she has picked out, or something she wanted her and Ciel to do that day for example Elizabeth's introduction into the manga. This side of her is usually the one that shows through the most when she is happy and especially when seeing Ciel since she just wants to try and get him to smile, so it's kind of like her way of attempting that.
As mentioned above, Elizabeth tried to make Ciel smile, usually resulting in the exact opposite of what she was trying to do like during the time she tried to have a party only for it to end with her breaking Ciel's ring and nearly making him slap her. This usually makes her upset and generally cry, much like a little kid when they have a tantrum. This can also happen when she tries to do something and it goes completely wrong. She also has a pretty strong will when it comes down to what she wants, when someone says otherwise she has been known to ignore it as well. All of this has been shown in her introduction chapter. This could either be called a strong will or just plain stubbornness. But overall she does have Ciel's best interests at heart, but she just goes about them in the wrong way. It has been known that Lizzie gets sad and worries about Ciel since the death of his parents changed him, it's not something she was use to so she gets upset about the fact she can't get to see his smile again, just like the old days.
She is pretty clueless to the things that Ciel gets up to, or the dark secrets the family have, although this may not to correct given the fact she mentions being the future wife to the Queen's watchdog when we find out about her fencing skills. This shows that she's much smarter than looks first appear. In fact she is called a child genius with a sword, though it's unsure if this is just with a sword or if she is much smarter in most areas than she lets on. Although that is the case of being smart in one area, Elizabeth can still be a little naive in certain things that happen and can also be easily distracted, an example of this being the time when she was at a party, whenever she tried to ask a pretty young girl about her dress, to which this so called pretty young girl was Ciel, they would put up ways to distract her even for a tiny moment to get away.
Being a daughter of a Marchioness, Lizzie has learnt a lot about how to be a lady and also how to be a good wife for when she gets married to Ciel, or so she thinks will happen. She seems to learn from these lessons as when Ciel needed to put a shirt on, Elizabeth held one and mentioned the fact that it's a wife's job to help her husband get changed. She takes this very seriously, as she always does the most lady like things in the lady like manner, unless at times she tends to go into a child like manner when things don't go her way.
One thing she is really good at is sneaking away from home just to visit Ciel, it's never explained how she can actually manages to get past her parents, but it proves she can pass them without their knowledge. This shows she can be pretty sneaky when she wants to and also can appear at the most odd times, like during the recent arc when Ciel was busy investigating an area where someone had ran off to and Lizzie turned up behind him with cake. This example also shows that Lizzie is a lot braver than her looks would show, as she seems to look like your average damsel in distress, but she's clearly willing to go to a place that could be considered scary if there's someone she knows there.
When the zombies do attack though, the fear will return since she can go to these creepy places, but for being able to defend herself is something she hasn't been shown to be able to do because Ciel always defends her from harm. Though this had changed from chapter 57 when it was shown that Lizzie can in fact defend herself rather well, she just tends to hide that factor from Ciel because of something he said many years ago and she's worried if he found out he wouldn't think she was cute no more, but mentions later on that she doesn't mind if she's not cute as long as she can protect at that time Ciel, but I'm sure it would apply to the her close family as well as friends.
When it comes to her family, she is very close to them, very much like a normal family would be and it shows in the way she acts around them, although sometimes she may act different when she see Ciel, though when her mother tells her not to act like that in public she does listen, which shows that she does respect her mother a lot.
Overall in Lizzie's mind she just wants to see Ciel smile, be happy and overall she wants to protect him and the people closest to her from harm, even if it means she has to out what she can do in order to do it. Even if that means having to not fully be a lady in order to do it. Adding to that in social situations such as parties Elizabeth is one that can easily glide around the room and be able to talk to just about anyone.
